The lines
Match the mortar to the brick
The jointing mortar should be at least as refractory as the brick it beds, which in practice means matching the alumina grade. A 70% brick bedded in a 30% mortar has a 30% lining wherever the joint is exposed, and the joint is the first thing slag and alkali find. Grade selection here is not a place to economise: mortar is a small fraction of the material cost of a lining and a large fraction of its failure modes.
Coarse or fine
Grade choice follows joint thickness. Fine mortars are for thin joints, where the intent is a dipped brick and a joint measured in a couple of millimetres. Coarse mortars carry thicker joints and are used where the brick tolerance or the geometry does not allow a thin one. A thick joint in a fine mortar shrinks and cracks; a thin joint in a coarse mortar will not close.
Thin joints are the point
Whatever the grade, the joint is the weak plane. Keep it as thin as the brick tolerance allows, keep it fully filled, and do not use mortar to correct for brickwork that is out of line. Most joint failures found on a stripped lining are placement failures, not material failures.
Where this is the wrong answer
Bedding insulating brick where the mortar's own conductivity would bridge the insulation, and any duty where a monolithic patch is what is actually wanted.
